Deliciously Yummy Granola!

How many times have you heard someone say 'breakfast is the most important meal of the day?'

It just happens to be true.


This Granola recipe by Ella (passed on to me by my Sister-in-Law, Lucy) has become an absolutely firm favourite in the Panacea household. Oats fill you up and the wonderful roasted coconut and maple syrup are complemented wonderfully by almonds, pumpkin seeds and sunflower seeds.


Try it. It's devine. Yum.


NUTTY GRANOLA by Deliciously Ella

MAKES 1 LARGE JAR | VEGETARIAN & VEGAN FRIENDLY



INGREDIENTS


  • 400g jumbo oats

  • 6 tablespoons coconut oil

  • 160ml maple syrup

  • Grated zest of 1 orange, plus a squeeze of the juice

  • 70g sunflower seeds

  • 50g pumpkin seeds

  • 40g almonds, roughly chopped

  • 60g cashews, roughly chopped

  • 30g hazelnuts, roughly chopped


METHOD


  1. Preheat the oven to 140c, fan setting.

  2. Line a large baking tray with baking parchment.

  3. Heat the coconut oil and maple syrup over a low heat until melted.

  4. Remove the pan from the heat and add the orange juice.

  5. Mix the rest of the ingredients in a big bowl and pour in the oil and syrup mixture

  6. Spread the mixture evenly over the lined tray and bake for about 45 minutes, stirring every 5 minutes, until golden brown.
